Pie Week 2024 is here! It is time to celebrate the much-loved pastry phenomenon that has the UK in a gravy and potato induced coma.
The History of the Pie
But first, let’s take a deep dive into the pastry-lined history of the iconic meal. The pie is said to have its roots in Ancient Egypt and Greece – although these are said to be in the style of an open pastry shell. The Romans apparently were the first to create a pie that included a top and bottom crust.
Pies, of course, encompass sweet and savoury fillings, and the two gained popularity over the centuries from its humble beginnings near the Colosseum. In fact, the pie became a staple for the travellers and working people in northern Europe, with it being easily transferrable and easily cooked over an open flame. What’s more, the Cornish pasty is an adaption of the pie for the working man!
Although, it is said that in the medieval era that the crust was simply there to keep the innards fresh and tasty, with the crust having to be cracked open to get inside. The medieval era essentially treated the pastry crust as an ancient form of Tupperware!

Don’t Judge a Pie by its Crust
Whilst we’re talking pie technicalities, I’ll also outline how pies can vary by their crust:
- A filled pie (single crust) has pastry lining the baking dish but the filling is left uncovered on top.
- A top-crust pie only has pastry on the top, covering the filling.
- A two-crust pie has the filling completely enclosed in the pastry shell, including pastry on the top.
For most, when we say pie, we think of the two-crust pie – whether that is sweet or savoury.
